Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1/4 cup oil
- 1/3 cup honey or maple syrup
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup shredded unsweetened coconut
- 1 cup crushed pineapple, drained
Directions
- Set oven to 350
- Combine cottage cheese, eggs, oil, and honey in a food processor. Pulse together
- Either by hand or with your food processor, combine the flour, baking powder, baking soda, and salt with the wet mixture
- Fold in coconut shreds and pineapple
- In a prepped muffin tin, evenly distribute the batter
- Bake for 15 – 18 minutes or until a toothpick comes out clean
- Let cool and enjoy
*These aren’t the sweetest, but they are excellent if you add extra honey, jam, peanut butter, etc on top!
