Pineapple Coconut Cottage Cheese Muffins

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup oil 
  • 1/3 cup honey or maple syrup
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup shredded unsweetened coconut
  • 1 cup crushed pineapple, drained

Directions

  • Set oven to 350
  • Combine cottage cheese, eggs, oil, and honey in a food processor. Pulse together
  • Either by hand or with your food processor, combine the flour, baking powder, baking soda, and salt with the wet mixture
  • Fold in coconut shreds and pineapple
  • In a prepped muffin tin, evenly distribute the batter
  • Bake for 15 – 18 minutes or until a toothpick comes out clean
  • Let cool and enjoy

 

*These aren’t the sweetest, but they are excellent if you add extra honey, jam, peanut butter, etc on top!
