Browned Butter Iced Oatmeal Cookie Bars

Ingredients

  • Bar Ingredients
    • 1/2 cup unsalted butter, melted and cooled
    • 1 cup old-fashioned oats
    • 1 cup Kamut flour or 1 cup + 2 TBSP all-purpose flour
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 tsp cinnamon
    • 1/2 cup granulated sugar
    • 1/2 cup light brown sugar, packed
    • 1 large egg- room temperature
    • 1 TBSP molasses or honey
  • Icing Ingredients
    • 1/2 cup powdered sugar
    • 1-2 TBSP whole milk

Directions

  • In a skillet over medium heat, brown butter. Let it cook until light brown, and then remove from heat. Pour into a medium sized bowl to cool
  • Set oven to 350 and spray or line a 9 x 9 with oil or parchment paper
  • In a bowl, combine all bar ingredients together
  • Pour into pan and spread evenly
  • Bake for 20 – 24 minutes or until the edges are set and the top is a rich brown. Do not overcook, or the bars will be dry
  • Let cool for at least an hour
  • Mix icing ingredients and ice the squares
  • Enjoy!

    These are *chefs kiss* good!! And supper easy to make! I even added a scoop of collagen, so so good!!

    I made these today and they are fantastic! Very easy to make and the brown butter really gives them rich flavour. I’ll be saving this recipe and definitely making them again.
