Winter Roasted Brussels Salad

If you couldn’t tell, I am a huge fan of Brussels Sprouts over lettuce for salads. They are so much more filling and flavorful!

Ingredients

  • 4 cups shaved Brussels (you can buy them pre-shaved)
  • 1 shallot- chopped
  • 1 tsp garlic powder
  • 2 TBSP olive oil
  • 1/3 cup pomegranate seeds
  • 1/3 cup chopped pecans
  • 1/3 cup blue cheese or goat cheese
  • Salt and pepper to taste
  • Balsamic vinegar 

Directions

  • Set oven to 425
  • On a sprayed cookie sheet, add Brussels and chopped shallot
  • Coat with olive oil, add garlic powder and toss
  • Bake for 25 minutes, tossing halfway through 
  • Add toppings once Brussels are removed from the oven 
  • Enjoy!
