Trick your kids, trick your spouse, trick yourself. This soup has EIGHT cups of vegetables plus 20g of protein in each serving!
(no photo because it’s not the most aesthetic look soup but dip some sourdough in it and you won’t care)
Ingredients
- 4 cups broccoli- chopped
- 1 onion- chopped
- 4 large carrots- chopped
- 3 celery stalks- chopped
- 2 TBSP butter
- 2 TBSP minced garlic
- 1/4 cup flour
- 4 cups vegetable or chicken broth
- 2 cups whole milk
- 1 cup shredded cheddar cheese
- 2 cups cottage cheese
- Salt and pepper to taste
Directions
- Chop all veggies
- In a large soup pan, melt butter and cook onion, carrots, and celery for 10 minutes, stirring often
- Add garlic and flour- coating vegetables
- Add the broth and broccoli and bring to a simmer for 10 minutes
- Add the milk, cottage cheese, and cheese and cook over low heat
- Using an immersion blender, gently blend the soup
- Add salt and pepper if needed, and enjoy!
