Pumpkin Coffee Cake

Ingredients

  • Cake
    • 1.5 cups Kamut flour or 2 cups All-Purpose flour
    • 1/2 cup butter- softened
    • 1 tsp pumpkin pie seasoning
    • 1 tsp cinnamon
    • 1/2 tsp salt
    • 2 tsp baking powder
    • 1 large egg
    • 1/3 cup whole milk
    • 1/4 cup brown sugar
    • 1/4 cup sugar
    • 1 cup pure pumpkin (not pie filling)
  • Topping
    • 1/2 cup flour
    • 1/4 cup cubed cold butter
    • 1/4 cup brown sugar
  • Icing
    • 1/2 cup powdered sugar
    • 1 TBSP milk

Directions

  • Set oven to 350 and prepare a 9 x 9 pan 
  • In a large bowl, combine all cake ingredients- do not over-mix
  • Spread the batter into the prepped pan
  • In a small bowl, combine topping ingredients, and using your fingers or pastry cutter, break down the butter into small crumbles
  • Sprinkle the topping over the batter and bake for 25-27 minutes (until the topping is golden brown)
  • Once cooled, prepare icing by mixing ingredients and spreading it over cake
