Ingredients
- Cake
- 1.5 cups Kamut flour or 2 cups All-Purpose flour
- 1/2 cup butter- softened
- 1 tsp pumpkin pie seasoning
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 tsp baking powder
- 1 large egg
- 1/3 cup whole milk
- 1/4 cup brown sugar
- 1/4 cup sugar
- 1 cup pure pumpkin (not pie filling)
- Topping
- 1/2 cup flour
- 1/4 cup cubed cold butter
- 1/4 cup brown sugar
- Icing
- 1/2 cup powdered sugar
- 1 TBSP milk
Directions
- Set oven to 350 and prepare a 9 x 9 pan
- In a large bowl, combine all cake ingredients- do not over-mix
- Spread the batter into the prepped pan
- In a small bowl, combine topping ingredients, and using your fingers or pastry cutter, break down the butter into small crumbles
- Sprinkle the topping over the batter and bake for 25-27 minutes (until the topping is golden brown)
- Once cooled, prepare icing by mixing ingredients and spreading it over cake
