Creamy Tomato Orzo with Ground Antelope

This super hearty meal took less than 20 minutes to prepare and was loved by the kids, too!

Ingredients

  • 2lbs ground antelope (or any other ground meat)
  • 1 medium onion- chopped
  • 2 TBSP minced garlic
  • 1 tsp Italian seasoning
  • 1 cup uncooked orzo pasta
  • 2 14oz tomato sauce cans
  • 3/4 cup broth
  • 1 cup heavy cream
  • 1 tsp Worcestershire sauce
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups (packed) baby spinach
  • Salt and pepper to taste

Directions

  • Add ground antelope and break it apart in a large pot or Dutch oven. Cook on medium-high for 5-6 minutes
  • Add chopped onion to meat and cook together for another 5 minutes
  • To the meat, add garlic, Italian seasoning, pasta sauce, broth, cream, Worcestershire sauce, and uncooked orzo
  • Continue cooking and stirring for 10 minutes (turn the heat down to bring it to a slow boil)
  • Remove the pot from the heat and stir in parmesan and spinach- cover the pot for a few minutes to allow the cream to thicken
  • Enjoy!
