I have been on a baking kick lately and I came across a variation of this recipe on TikTok and needed to recreate it- but in a slightly healthier way. Again, per usual, using the Swerve sweetener in both the granular and powdered versions which saves over 2,000 calories (which is insane to me). Again, calories are not the enemy but if you can reduce a recipe by that many and still have it taste almost identical (and no negative gut side effects), it’s a no-brainer.
Ingredients
- Cake
- 1 cup butter- softened
- 1 cup SWERVE sugar
- 1/2 tsp cinnamon
- 2 cups Kamut flour (or 2.5 cups all-purpose)
- 3/4 cup milk
- 2 eggs
- 2 tsp vanilla extract
- 2 apples- chopped finely
- Optional Glaze
- 6 TBSP butter, melted
- 3 cups SWERVE powdered sugar
- 2 tsp vanilla
- 3 TBSP heavy cream or milk
Directions
- Set oven to 300 and spray bread tin (code SARAH_BOWMAR10) with spray oil
- In a stand mixer, beat butter until light in color (about 3 minutes)
- Gradually add in sugar and cinnamon until light and fluffy
- On low, add eggs one at a time
- Gradually add flour and milk
- Add vanilla
- Fold in apples
- Pour batter into loaf pan and fill 3/4 high
- Bake 65 minutes
- Optional: mix glaze and top once cooled
