Frosted Lemon Bars

These are perfect if you are looking for something that isn’t sickly sweet and over the top! 

Ingredients

  • Cake
    • 2 cups kamut flour (or 2.5 all-purpose)
    • 4 large eggs
    • 2/3 cup honey
    • 2/3 cup butter- room temperature
    • 1/2 cup milk
    • 2 tsp pure vanilla extract
    • 3 TBSP fresh lemon juice (about 1 1/2 lemons)
    • Zest from the above lemons
    • 1 tsp baking soda
    • 1/4 tsp salt
  • Frosting
    • 1/4 cup butter at room temperature
    • 4oz cream cheese at room temperature
    • 2 tsp pure vanilla extract
    • 1 cup powdered sugar

Directions

  • Preheat oven to 350
  • Lightly grease or spray 9 x 9 inch baking dish (code SARAH_BOWMAR10 for 10% off)
  • In a stand mixer, add eggs and beat until frothy. Add honey, butter, milk, vanilla, lemon juice and zest and beat until combined
  • Add flour, baking soda, and salt and mix- do not over-mix
  • Pour the batter into the prepared baking dish and bake for 35-40 minutes 
  • Combine all ingredients for frosting if you’re making at home
  • Cool the cake completely before frosting
