I am utterly obsessed with making my own noodles and pasta—I actually don’t know why I didn’t start sooner. I know it seems intimidating, but it’s super simple. I use the KitchenAid pasta attachments, but you can always use a hand crank or completely do it by hand with a pasta cutter and rolling pin!
You can also omit the basil leaves in this for regular pasta. Cut in whatever pasta shape you desire!
Another thing to note: cooking homemade pasta is very different from cooking boxed pasta. Once your water is boiling, it takes less than 2 minutes to cook, so I like to start boiling my water before I roll the pasta. The timing usually works out for the water to be boiling once I am done cutting the pasta.
Ingredients
- 2 1/2 cups Kamut flour (3 cups wheat or white flour) + more for rolling
- 6 eggs
- 2 cups basil leaves (from my indoor herb garden)
- 1/2 tsp salt
Directions
- In a food processor, combine flour and basil leaves until finely chopped
- In a bowl, add eggs, salt, and flour mixture
- Mix by hand with a dough mixer or a stand up mixer
- Once combined, add dough to floured surface; knead until thoroughly combined
- If dough is sticky, add more flour
- Roll dough into 8 rectangles (work quickly to prevent the dough from sticking to the counter)
- Using your pasta roller, roll each rectangle several times. I like to add extra flour to both sides to prevent it from getting stuck in the pasta roller
- Once rolled, cut each section and hang to dry (I drape mine over the side of a bowl)
- Once all pasta has been rolled and cut, add to boiling water and cook 1-2 minutes
- Enjoy!
