Salted Pumpkin Zucchini Chocolate Chip Muffins

The title is long enough, so we don’t need an intro paragraph 🙂

Here’s the tool I use to shred my zucchini from the garden

*This recipe yields two dozen full sized muffins

Ingredients

  • 3 cup grated zucchini
  • 1 cup pure pumpkin
  • 3/4 cup granulated sugar
  • 1/2 cup olive oil
  • 2 large eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg
  • Handful of chocolate chips
  • Coarse salt for topping

Directions

  • Set oven to 350
  • Mix all ingredients minus coarse salt
  • Line muffin tin with liners
  • Divide batter into 24 muffin tins, filling about 2/3 full
  • Top with salt
  • Bake 17 – 20 minutes
  • Enjoy!
