Venison Sausage Tortellini Soup

venison sausage tortellini soup

A perfect recipe for chilly fall and winter days: Venison Sausage Tortellini Soup! You can easily sub any sausage for this recipe if you want, the venison is simply what we use out of our freezer!

Ingredients

  • 1lb venison sausage
  • 1 yellow onion- diced
  • 3 cloves minced garlic
  • 3 TBSP flour
  • 1 tsp dried basil
  • 1/2 tsp oregano
  • 1 tsp hot suace
  • 1 cup heavy cream
  • 5 cups broth of choice
  • 2 cups kale- chopped
  • 2 cups refrigerated tortellini
  • Salt / pepper to taste

Directions

  • Cook and crumble sausage and diced onions over medium heat until onions are softened and sausage is cooked. Drain grease. Add garlic and cook 1 minute
  • Add flour and cook 1-2 minutes
  • Add all seasonings and hot sauce
  • Add broth, add cream, brith to a boil and reduce to a simmer
  • Add kale and tortellini and simmer for 3-5 minutes (if tortellini needs a longer cook time, add that first and then kale for last 5 minutes)
  • Add salt / pepper, serve!
