Turkey Noodle Soup

turkey noodle soup

I was doing a meat rotation on our one freezer this weekend and found a turkey breast from the spring from a bird I got with my bow! you can obviously use chicken in this recipe as a replacement but I hope this gives you more ideas on how to use wild meat for!

Ingredients

  • 1 TBSP butter
  • 1/2 cup onion- chopped
  • 1/2 cup celery- chopped
  • 1 lb turkey breast- cooked* and cubed
  • 1.5 cups egg noodles
  • 1 cup sliced carrots
  • 1/2 tsp oregano
  • 4 cups vegetable or chicken broth
  • Salt and pepper to taste

Directions

  • In a large pot over medium heat, add butter, onion, and celery- cook until tender
  • Pour in broth, stir in turkey, noodles, carrots, oregano, salt, and pepper
  • Bring to a boil then reduce heat and simmer 20 minutes before serving

 

For my wild turkey, I will simply cook in the crockpot. Set crockpot to high, remove all feathers from breast, add breast to crockpot and cover with water. Takes 4-5 hours depending on size of breast
