Venison Meatloaf and Cheesy Corn

venison meatloaf and cheesy corn

I know we are all looking for easy dinner and meal ideas and you have found the perfect one! No need for a dissertation on meatloaf- everything you need can be found below!

Meatloaf Ingredients

  • 1.5 lbs ground venison (can use any other meat)
  • 1 chopped white onion
  • 1 chopped red pepper
  • 1 TBSP minced garlic
  • 1 egg
  • 2 TBSP Worcestershire sauce
  • 1 packet Mrs Dash salt free meatloaf seasoning (found at Hyvee)
  • Sauce: 3 TBSP ketchup, 1 TBSP mustard, 1 TBSP honey

Directions

  • Preheat over to 375 and grease a 9 x 9 loaf pan or 12 muffin tin
  • Dice the onion and bell pepper, sauce in pan over medium heat until soft, Add garlic. Cook 30 seconds more
  • Add ground venison and above mixture to a bowl. Add remaining meatloaf ingredients and combine with hands. Try not to over mix
  • Dump prepped mix into loaf or muffin tins
  • Bake in over for 40-45 minutes
  • While meatloaf is baking, combine sauce ingredients. You may need more depending on how much sauce you want on the top. Spread sauce over meatloaf and put back in the oven for another 15 minutes

Cheesy Corn Ingredients

  • 4 TBSP butter
  • 1 16oz bag frozen corn
  • 6oz cream cheese- cut into chunks
  • Salt and pepper to taste
  • Ground parmesan to top

Directions

  • In a skillet over medium heat, melt butter.
  • Add corn and cook for 5-8 minutes, stirring occasionally
  • Add cream cheese and salt. Stir together and let it cook about 3-5 minutes
  • Top with cheese and serve
