Hi all!! Sarah Bowmar here stopping in with one of my new recipes! You LOVED my previous avocado appetizer that I posted, so I thought I would change it up a bit and give you some variety! These snacks are so fun to make because they are simple and they look beautiful. I am unashamed to say I am all about the aesthetic.
This is the perfect chipotle-fiesta style snack. Also this is an easy, low carb snack or appetizer–I love these because if you’re the house that hosts all the things, you want a healthy option to please all parties!! The information below is for 1 avocado that creates 2 of these snacks. Multiply this recipe if you are hosting people and just purchase the needed number of avocados!
Ingredients
1 Avocado
1 tablespoon of salsa (I usually use mild chunky salsa)
1 tablespoon of corn (I used frozen corn because it was easier and obviously keeps longer! We don’t frequently eat corn in this home or need it in recipes!)
Feta cheese crumbles (YUM! I love feta cheese. It is simple and an easy cheese to like–this makes this meal even better for hosting)
1 tablespoon of lite southwest style ranch (any chipotle or southwest ranch works, or you can go with out this and it is still super flavorful!)
Directions
Put corn in a skillet with salt and pepper and let cook on medium until the corn begins browning on the edges
Cut the avocado in half and remove the pit/seed
Scoop salsa into avocado
Scoop corn into avocado
Sprinkle with feta cheese crumbles
(Optional) Drizzle on lite southwest ranch
Ta da! You have an easy, low carb, healthy appetizer! This is such an easy snack and it is super filling so you could pair this with just about anything and have yourself a meal! Happy cooking!
